DV is the tape-era camcorder codec from 1995 — a raw .dv file is the DIF bitstream pulled straight off a miniDV or Digital8 cassette over FireWire, recorded frame-by-frame at a fixed ~25 Mbit/s (DV25), which is why an hour of footage runs roughly 13 GB. MPG is the older MPEG Program Stream that DVD-Video and legacy set-top players were built on. Converting DV to MPG re-encodes that bulky intra-frame capture into MPEG-2 video with MP2 audio, the exact lineage a DVD-authoring suite expects — always a full re-encode (there is no way to re-wrap DV as MPEG), so keep your original captures if you are archiving.

The .mpg extension can carry either MPEG-1 or MPEG-2 video; the two are different standards with different targets. For a DV conversion this tool outputs MPEG-2 by default, because DV footage is 720×480/576 standard definition and MPEG-2 is the codec DVD-Video is built on.

DV footage is 720×480/576 standard definition, and MPEG-2 (ISO/IEC 13818, also standardized as ITU-T H.262 in 1995) is the codec DVDs are built on, so it is the safer general-purpose choice for an .mpg. You can switch the Video Codec dropdown to MPEG-1 (ISO/IEC 11172, 1993) if you are specifically targeting a Video CD or older hardware that needs it — but MPEG-1 tops out around 352×240 at ~1.15 Mbit/s, so it will look softer than MPEG-2 at DVD bitrates.
Yes — that is its strongest use case. An MPEG Program Stream with MPEG-2 video and MP2 (or AC-3) audio is the exact lineage DVD-Video is built on, so the .mpg slots cleanly into authoring tools. For a strictly DVD-compliant disc your authoring program may still re-multiplex the stream into VOB files and enforce its own resolution and bitrate rules (video up to ~9.8 Mbit/s), but starting from MPEG-2 saves it an extra re-encode.
Some, yes — it is always a full re-encode, never a re-wrap. DV stores every frame independently with DCT compression; MPEG-2 uses predicted (I/P/B) frames and re-encodes that footage into a different lossy codec, which discards a little detail. The loss is least visible when you keep the native 720×480 or 720×576 resolution and frame rate and set a high bitrate; it grows if you also downscale or target a small file in the same pass. There is no way to add quality back — the MPG can only match or fall below the DV source, so keep your original .dv if it is a master.
Usually a large reduction, because MPEG-2 compresses motion between frames while DV does not. DV runs at a fixed ~25 Mbit/s, while MPEG-2 at typical DVD bitrates of 4–8 Mbit/s carries comparable standard-definition quality. In our testing, a 5-minute NTSC DV capture (about 1.1 GB on disk) encoded to MPEG-2 at roughly 6 Mbit/s produced an .mpg near 240 MB — about a 4–5× reduction. Push the bitrate or Quality Preset lower and the file shrinks further at the cost of visible blockiness.
Choose MPG when your target is a DVD, a Video CD, or a legacy set-top player that expects an MPEG Program Stream — MPEG-2 is what those devices decode natively. For everything else, MP4 is the better modern target: H.264 in an MP4 is far more efficient than MPEG-2 and plays on phones, browsers, and smart TVs, so it produces a smaller file at equal quality. If you only want a compact, universally playable copy rather than a disc, convert DV to MP4 instead.
Desktop players like VLC and MPC-HC open MPEG-1/MPEG-2 program streams directly, and DVD players and older set-top boxes decode MPEG-2 natively — that broad hardware support is much of why the format still exists. What .mpg does not get is native playback in web browsers or on most modern phones, which expect H.264/H.265 in MP4. If you need the clip to play on a phone or in a browser, MP4 is the right target; if you need it on a disc or a legacy player, MPG is.
By default the field order is preserved, which is correct for DVD authoring — DV from camcorders is almost always interlaced (720×480/576i), and DVD-Video is an interlaced standard, so an interlaced MPEG-2 stream is what a set-top player and TV expect. If instead you are making a file for a progressive display like a phone or computer monitor and see combing or "tearing" lines on motion, deinterlace the footage in a desktop editor first — no conversion here deinterlaces, so the combing otherwise carries through. Interlaced output is the right choice only if the destination is a disc or a broadcast-style player.
